Inspired by Hugh Fearnley Whittingstall's meat free summer, and my own frugal meal challenge, we have taken the conscious decision to eat vegetarian 5 nights a week. This is the end of week one and it's gone quite well, my son aged 10 hadn't even noticed!
In my search for frugal family friendly veggie based meals I came across a couple of really good websites, Fat Free Vegan , Parsley soup and Allotment 2 Kitchen. Great sites which have given me a huge amount of inspiration. the Lentil and Bulgar soup pictured is from here and it was delicious (despite only using one of the recommended 2 tins of tomatoes).
This weeks menus were
Monday - Braised steak
Tuesday - Jewelled Dhaal with rice(recipe here)
Wednesday - root veggie stew with dumplings
Thursday - Pasta with leek and blue cheese sauce
Friday - Veetable and chick pea curry
Saturday - veggie fajitas
Sunday - Roast turkey with all the trimmings
This weeks shopping bill was almost non existent(I only bought milk, onions, eggs and some cabbage), so I used some of my £20 to stock up on a few non-perishable xmas food items. I did treat myself to a students veggie cookbook for 99p in the charity shop though, and a little birdie tells me Hugh's book may well make it in time for my birthday in a few weeks :)
