Happy New year to you all!
The new year entered here rather quietly as usual, but a celebration dinner is planned for this evening, a very grown up mediterraneam influenced affair. The meal cosists of marinated vegetables , olives, cured meats(inluding a chorizo made by a friend), sunblush tomatoes(made by me from our own tomatoes ). I am making a huge soda bread , and will have a selection of continental cheeses including a grilled halloumi.
I wil also be making some fresh hummus it's so easy I can never understand why people buy it.
Hummus
1 can of chick peas drained but reserve the juice
1 teaspoon of chopped garlic (I use the easy stuff)
2 teaspoons lemon juice
whizz all these ingredients in blender you may need to add some of the reserved juice to get the right consistency . Taste and season to taste I like mine extra lemony with lots of black pepper! I know technically it should also contain tahini , but I have tried it both ways and don't find it lacking in any way.
Great as a dip or as a frugal sandwich filling...............enjoy

sounds delicious. I have been going right through your previous blog posts to gain a bit of inspiration for our veg growing this year.We have a tiny garden but do have a small greenhouse and intend to try and grow more veg this year. I like your ideas for container gardening and that is probably going to be a good option for us.Hope you enjoy your meal!
Love the look of your soda bread - one of our favourites. We've never tried hummus, will have to give it a go.
